Soncini Deboning DS

The deboning DS is a semi-automatic pneumatic machine to debone matured raw hams with a “push-out” method. The machine guarantees the optimization of this operation, increasing quality and productivity. In fact, a series of special features makes the Soncini prosciutto curing process equipment very easy to use, allowing the operator maximum freedom of movement with their hands during processing operations.

Soncini Shank Cutter

This is a semi-automatic machine that cuts the ham shank, facilitating haunch removal and manual gouging of the femoral bone. Cutting by means of round blade is also reliable in any operating condition. It works under approximate and sensitive variables, depending on the operator, with reliable and easy accessibility of each single component part. This process is made possible by the subdivision of the switchboard and pneumatic unit.

Soncini Shaping NT

Soncini’s shaping NT is an automatic press designed for pressing boned raw ham, speck, pork loin salami, salted dried beef, and similar products. It can produce both “calibrated” brick-type formats with constant slice cross-section irrespective of the product weight, and the conventional “shaped” type. The press is equipped with special multi-format molds that can simultaneously produce products with two different shapes: one parallelepiped shape with constant height and width and variable length for different weights, and one with conventionally-shaped product. Format changeover can quickly be carried out without requiring any specific technical skill.
Pressing is carried out to give the product shape, compactness, and homogeneity with a cycle of massages (programmable via the touchscreen operating panel). These help the air escape from the inside and carry out the proteolytic phase necessary to keep the slice intact.

Soncini Shaping TR

The TR is an automatic machine for processing boned raw ham and speck in the various conventional formats in the Soncini prosciutto curing process equipment. Pressing is carried out to give the product shape, compactness, and homogeneity with a cycle of massages (programmable via the touchscreen operating panel). These help the air escape from the inside and carry out the proteolytic phase necessary to keep the slice intact. The considerable pressure exercised contributes to generating heat, which is responsible for partial melting of the fats. To get around this problem, the press is internally cooled, which reduces product weight loss and bacterial contamination at the same time. The machine is equipped with a number of molds, normally between 1 and 4. The molds are customizable according to the customer’s requirements.

Soncini Forming AD

The forming AD is a semi-automatic machine suitable for forming boned raw hams in traditional “adobo” form. Completely pneumatic, it is designed to form various sizes in a precise and reliable way, from the smallest to the largest product, without having to perform any size change operations. The pressing unit is made entirely of stainless steel (including pneumatic cylinders), complete with a system for massaging the product which can be set by the operator. A unique piston is placed to the front of the ham to flatten that side and create a “ready-to-slice” effect, reducing the weight loss of the product. Plastic hooks fit easily on the foot of the ham during pressing.
