Semi-automatic pneumatic machine to debone matured raw hams with “push-out” method. The machine guarantees the optimization of this operation, increasing productivity under high quality standards in the maximum security. In fact, a series of special features makes it very easy to use, allowing the operator maximum freedom of movement with his hands during processing operations.

Semi-automatic machine that cuts the ham shank

Soncini Shank Cutter

A semiautomatic machine that cuts the ham shank at the same time facilitating haunch removal and manual gouging of the femoral bone. Cutting by means of round blade is also reliable in any operating condition. Approximate and sensitive variables, depending on the operator. Reliable and easy accessibility of each single component part, made possible by the subdivision of the switchboard and pneumatic unit.

Soncini Shaping NT

Automatic press designed for pressing boned raw ham, speck, pork loin salami, salted dried beef and similar products to produce both “CALIBRATED” brick-type formats with constant slice cross-section irrespective of the product weight, and the conventional “SHAPED” type. The press is equipped with SPECIAL MULTI-FORMAT MOULDS that allow simultaneously processing products with two different shapes:
one parallelepiped shape with constant height and width and variable length for different weights and one with conventionally-shaped product. Format changeover can quickly be carried out without requiring any specific technical skill.
Pressing is carried out to give the product shape, compactness and homogeneity by means of a cycle of massages (programmable via the touchscreen operating panel) which help the air escape from the inside, as well as the proteolytic phase necessary to keep the slice intact.

Soncini Shaping TR

Automatic machine for processing boned raw ham and speck in the various conventional formats. Pressing is carried out to give the product shape, compactness and homogeneity by means of a cycle of massages (programmable via the touchscreen operating panel) which help the air escape from the inside, as well as the proteolytic phase necessary to keep the slice intact. The considerable pressure exercised contributes to generating heat, which is responsible for partial melting of the fats; to get round this problem, the press is internally cooled, which allows reducing product weight loss and bacterial contamination at the same time. The machine is equipped with a number of moulds, normally between 1 and 4. The moulds are customizable according to the customer’s requirements.

Semi-automatic machine suitable for forming boned raw hams

Soncini Forming AD

Semi-automatic machine suitable for forming boned raw hams in traditional “addobbo” form. Completely pneumatic, it is designed to form various sizes in a precise and reliable way, from the smallest to the largest product, without having to perform any size change operations. Pressing unit made entirely of stainless steel (including pneumatic cylinders), complete with system for massaging the product which can be set by the operator. Unique piston placed to the front of the ham to flatten that side and create a READY-TO-SLICE effect, reducing the weight loss of the product. Unique and innovative is the possibility of easily fitting plastic hooks on the foot of the ham while this is being pressed. Robotization option.
